I love all dishes that have fresh peaches. Peach pie, peach cobbler, peaches and cream, peach smoothies. But I found another great way to add peaches to dinner in this simple and delicious spicy peach chicken for two main dish with fresh peaches that can be made for a busy weeknight evening meal. It’s just my wife and me so it’s perfect with no leftovers. If you have more people to serve or you’d like leftovers you can double the recipe.

What you’ll need for this spicy peach and chicken for two recipe

You may already have most of the ingredients in your pantry. They’re pretty common, but you do want fresh peaches and good quality chicken breasts.

  • 2 large skinless chicken breasts, salt, pepper, and grilled
  • 2 large ripe fresh peaches
  • 1 T butter
  • 1 tsp corn starch
  • 1/4 cup red wine vinegar
  • 2 1/2 T peach preserves
  • 1 1/2 T sugar
  • 1/8 tsp cayenne pepper
  • 3/4 tsp chili powder
  • 1/4 tsp salt
  • a handful of chopped pecans

Here’s how to put it all together

Grill the chicken, however, if you don’t have the grill or don’t want to go outside, then you can fry or bake the breasts until moist but done.

Prepare the sauce while you grill the chicken. First, melt the butter in a small saucepan. Next, stir in the corn starch and cook briefly, about a minute. Then, add red wine vinegar, peach preserves, sugar, cayenne pepper, chili powder, and salt. Heat and cook so the preserves dissolve in the mixture. Add the peaches and pecans and cook on medium to low, stirring occasionally until the peaches are heated through.

You could go one step further and grill the peaches, too, ahead of time, especially if you’re using wood smoke or charcoal. It will give this dish added flavor.

Remove the chicken from the grill and place it on a plate. Top with the peach sauce and enjoy! I made asparagus as a side dish which was a wonderful compliment to the chicken and peaches.
