This is a versatile side dish recipe where you can use any veggies, any spices, or marinades you feel like using at that time. This is a great way to get your veggies in and a quick side for any wonderful BBQ meal. Simple Grilled Veggie Kabobs:

  • Zucchini
  • Yellow squash
  • Onion
  • Cherry or grape tomatoes
    (you could add mushrooms, asparagus, or any veggie)

Sauce:

  • Olive oil
  • Lemon juice
  • Salt and Pepper
  • Italian herb blend
    (any spice will work)

Wash the veggies. Cut the zucchini and yellow squash in large enough chunks so you can skewer them lengthways (refer to picture). Chop onion in large chunks. Leave tomatoes whole (mushrooms you would leave whole too). Mix everything in a bowl.

Combine olive oil, lemon juice, and spices. The amount will depend on how big your batch is, so do this by eye. You really can’t go wrong with the measurements here. It is important to use enough oil, though, so the veggies won’t burn or stick to the grill.

Pour sauce over veggies and mix until they are coated nicely. Take the skewers; I used wood ones that I soaked in water for a while (this way, they don’t burn…so this is an important step) and skewer veggies in an alternating pattern.

Throw onto the grill and turn to ensure both sides are cooked and have those lovely grill marks on them. Veggies don’t take too long to grill, so keep an eye on them.
