Yum! This is my all time-favorite-go-to-for-everything Biscuits & Gravy Breakfast Casserole recipe! I make it for basically every family gathering and then some!
What you need for the casserole:
- 1 tube of Pillsbury buttermilk biscuits
- 1 pound of breakfast sausage (pork or turkey… pork is better)
- 8 eggs
- 1 cup milk
- 1/2 cup half&half(I use fat-free and it works great)
- 1 1/2 cups shredded sharp cheddar(or whatever cheese you have on hand)
- salt and pepper to taste
What you need for the gravy:
- fat from sausage(or if you used turkey 2Tbsp butter)
- 2 Tbsp flour
- 1 to 2 cups milk(you’ll have to add as it gets thick)
- 1Tbsp fresh sage
- ground nutmeg to taste
What you do to make this Biscuits & Gravy Breakfast Casserole:
Brown the sausage(reserve drippings). Cut the biscuits into pieces (I usually cut each biscuit up like a tiny pizza into about 6 pieces per biscuit). Mix the eggs with milk, half & half, and salt and pepper until well blended. Add cheese to the egg mixture and stir well. Spread cooked sausage and cut up biscuits in the bottom of a greased 9×12 baking pan. Pour the egg mixture over the sausage and biscuits.
Bake for 30-40 minutes or until golden brown. When the casserole is almost ready, re-heat sausage drippings or heat 2 Tbsp butter over med-high heat. Add flour and stir to incorporate fully. Add sage and nutmeg—cook mixture for 1 minute. Gradually add milk, stirring to incorporate about half a cup at a time until the gravy reaches your desired consistency. Serve casserole warm with gravy on top. Yum!
Note: You can change the meat to ham and add honey for a tasty southern treat. You can also use an egg substitute in place of the eggs. Just use a scant 1/4 cup per egg(so about 2 cups for this recipe)
