This baked codfish recipe is so easy, we make it during our busy weeknights. We use a 1 to 1 1/2 pound fresh cod fillet, but you could also use other white fish, such as haddock. If you use a thinner fillet of fish, you’ll need to reduce the baking time so you don’t overcook the fish.
Here are the ingredients you’ll need:
- 1 to 1 1/2 pounds cod fillet
- Olive oil
- 1 Tablespoon mayonnaise
- 1/2 to 1 Tablespoon fresh lime juice
- 1/4 teaspoon onion powder
- 1/8 teaspoon black pepper
- Approx. 2 Tablespoons of breadcrumbs
- 1 to 1 1/2 Tablespoons of melted butter
Here’s how to put it all together:
Preheat your oven to 425 degrees F.
- First I put foil in a large baking dish or cookie sheet. Sprinkle olive oil on the foil and lay the fish on top. Sprinkle a little more olive oil over the fish.
- Next, in a small bowl, combine and stir together the mayonnaise, lime juice, onion powder, and black pepper
- Spread the mixture over the fish
- Sprinkle with breadcrumbs and then drizzle the butter on top
- Bake uncovered at 425 degrees F. for about 20 minutes depending on the thickness of the fillet.
