This is a simple and delicious spicy peach chicken for two. The main dish can be made for a busy week evening meal. It’s just my wife and me, so it’s perfect with no leftovers. If you have more people to serve or you’d like leftovers you can double the recipe.

Here are the ingredients that you’ll need to make this Spicy Peach Chicken for two recipe:

  • 2 large skinless chicken breasts, salt, pepper, and grilled
  • 2 large ripe fresh peaches
  • 1 T. butter
  • 1 tsp corn starch
  • 1/4 cup red wine vinegar
  • 2 1/2 T peach preserves
  • 1 1/2 T sugar
  • 1/8 tsp cayenne pepper
  • 3/4 tsp chili powder
  • 1/4 tsp salt
  • a handful of chopped pecans

You can prepare the sauce while you grill the chicken. Grilling the chicken should take about 20 to 30 minutes, depending on how big of chicken breasts you have.

How to make the sauce:

First, melt the butter in a small saucepan. Stir in the corn starch and cook briefly, about a minute. Add the red wine vinegar, peach preserves, sugar, cayenne pepper, chili powder, and salt. Heat and cook until the preserves dissolve in the mixture. Add the peaches and pecans and cook on medium to low, occasionally stirring until the peaches are heated through.

Remove the chicken from the grill, top with the peach sauce and enjoy! I made asparagus as a side, which was wonderful with the chicken and peaches.
