I originally found this lemon & rosemary chicken with potatoes recipe on MyRecipes.com and made it for my family for Sunday dinner. This one-pot meal is so amazing, your friends and family will ask you to make it all the time. I doubled this recipe and had enough leftovers to take to work for a few days. It was great re-heated.

Here are the ingredients you’ll need to get:

  • 1/3 cup of good-quality olive oil
  • 1/4 cup of freshly squeezed lemon juice. It should be about 1 1/2 lemons. Make sure you remove the seeds
  • 2 lemons sliced about 1/8 inch thick
  • 1 jar of capers, drained
  • 10 smashed garlic cloves (even with this many, it wasn’t too overpowering)
  • 3 Tablespoons of fresh rosemary leaves
  • 1 teaspoon of kosher salt
  • 1 teaspoon of black pepper
  • 3 Tablespoons of good-quality olive oil
  • 2 pounds of small red potatoes
  • 4 chicken thighs, 4 chicken legs, and 4 chicken breasts, all with the skin left on.

Here’s how to put it all together:

  • First, preheat the oven to 450 degrees F.
  • In a medium-sized bowl, mix the first 8 ingredients through the black pepper
  • Place a large roasting pan on two of your burners. Make sure your roasting pan can take the heat of the stove. I thought about browning the chicken in my cast-iron pans, but I think browning the chicken in the pan you’ll roast in will give you all of the juices and good brown pieces in the bottom of the pan that you might not get from separate pans.
  • Add 3 Tablespoons of olive oil to the pan and heat over medium-high.
  • Sprinkle the chicken with a little salt and pepper and place skin side down in the roaster
  • Place the potatoes on top of the chicken.
  • Brown the chicken for about 8 to 10 minutes and then flip the chicken over
  • Pour the lemon mixture over the chicken and potatoes.
  • Roast for 50 to 60 minutes or until the chicken is done. (you’re not going to believe the aroma the will fill your house)
  • Serve hot with a thick slice of Italian or French bread. I saw each of my family members soaking up the juice with the bread. It’s good to the last drop!

Next time I make this recipe, I may add fresh green beans to the pot about halfway through the roasting process.
