Blueberry crumble breakfast bars are a tasty alternative to cereal or yogurt! The breakfast bars are great when you have a hunger craving or need a pick-me-up in the afternoon. Make enough for the entire family. They’ll go quickly!
The ingredients you need:
- 3 3/4s cup Old Fashioned oatmeal
- 1-1/4 cups all-purpose flour
- 1 cup whole wheat flour
- 1-1/2 cups brown sugar
- 1 cup coconut flour
- 1-1/2 cups butter
- 2 tsp baking soda
- 1 tsp salt
- 4 1/2 cups fresh or frozen blueberries
- 1/2 cups sugar
- 1 1/2 Tbsp. corn starch
How to create these blueberry crumble breakfast bars
Preheat your oven to 350 degrees F. In a bowl, combine the oatmeal, flours, brown sugar, soda, and salt. Melt the butter, and pour over the oatmeal mixture. Mix until incorporated and crumbly.
Press 2/3rds of the oatmeal mixture into an 11×15 inch pan, saving the other 1/3 for the topping. In a separate bowl, combine the blueberries, sugar, and corn starch. Mix until the blueberries are evenly coated with the sugar and corn starch. Pour over the bottom crust.
Crumble the remaining oatmeal mixture over the blueberries. Bake at 350 degrees F. for 20-25 minutes or until golden brown. Remove from the oven and let cool completely before cutting. Enjoy! The bars can be frozen individually and tossed in your lunch bag!
