This is my new go-to appetizer when I want something quick-and-easy and to impress my guests.
Here’s what you’ll need:
Blueberry preserves and fresh blueberries
Brie (a soft French cows milk cheese)
Baguette bread or you can substitute another dense bread.
Here’s what to do:
First: Slice bread on a diagonal ( I think it looks better, but you can make straight cuts as well)
Next: Place the slices on a cookie sheet and drizzle with olive oil
Toast: Lightly toast the bread in a 350 degree F oven, just until you see a little color forming
Then: Cut small chunks of brie to fit on top of the bread slices
Bake: Pop back in the oven in the oven for just a couple more minutes. Be sure and watch so the cheese doesn’t melt too much and the bread doesn’t get too dark.
Finally: Top with a 1/2 teaspoon of blueberry preserves and a fresh blueberry and serve immediately
