We’ve heard family and friends talk about how amazing avocado toast is for breakfast. They rant and rave about how it’s their “go-to” for their morning meal. I’ve always been an eggs benedict or over-easy eggs, meat, and hash browns kind of guy and just never had the desire to try this not so usual breakfast food. Until…
In early 2020 we were stuck at home because of the coronavirus pandemic that hit the world. It can be a frustrating and scary time for everyone. It can also be a time to reconnect with family, even if it’s virtual, a time to be creative and resourceful.
So, at home with avocados ripening, my wife and I decided to finally try this amazing avocado toast we had heard so much about. AND WE LOVED IT!
We used items we had on hand, and now I’m going to experiment with other additions and substitutions in the weeks to come. But here is our first attempt:
The ingredients we used:
- A good nut and 12-grain bread, which I think added to the taste and texture.
- Butter for the bread
- Olive oil for the pan to fry the egg and some to drizzle on the final creation
- An egg how you like it, I had a hard egg, my wife had over-easy. Next time…I’ll go with over-easy
- Sliced avocado
- Sliced tomato
- Crumbled goat cheese, or you could use feta as well.
- Fresh ground black pepper
- A touch of nutmeg on top, I use a grater and fresh nutmeg.
- Don’t forget to drizzle olive oil on top.
- And add basil; everything is better with basil. However, we didn’t have any, and ours in the garden hadn’t grown enough to pick
Putting it together:
Assemble it in the order above, add bacon, ham, or other ingredients that you like, and experiment with them. Let me know which ingredients or what you like to add to your avocado toast.
