I get requests for this easy holiday sweet treat every year. This holiday goodie has easy-to-find ingredients, they don’t need baking and they don’t take long to make. The potato chip, peanut, and almond bark cookies make great gifts for neighbors, family, and friends.
This easy holiday sweet treat is the perfect mix of sweet and salty. There are just three ingredients and you can use vanilla or chocolate almond bark. I like to make both and mix them in the gift box and on the plate for holiday gatherings.
Go to the store and buy vanilla or chocolate almond bark, a family-sized bag of potato chips, or two regular-sized bags, and 8 to 12 ounces of salted, Spanish peanuts.
Here’s what to do to make these delicious goodies
Using a butter knife, cut the almond bark into individual squares. Be careful and put the almond bark on a cutting board. It’s a bit hard to break them apart and you don’t want to ruin your counter.
Heat the almond bark in a large pan over medium heat. Stir often with a wooden spoon until all of the bark has melted. Next, add about 8 to 12 ounces of salted Spanish peanuts and stir to mix.
Now, take the potato chips and using your hands crush them into small pieces. Add them to the almond bark and peanut mixture. You’ll know you’ve added enough when the almond bark isn’t soupy. It will harden, too as it sets.
Let them harden if you can
These are so good you’ll be tempted to just eat the mixture with a spoon. However, you’ll want to spoon them onto waxed paper or foil until they harden. I use a heaping spoonful and put them on the paper or foil. I was able to get 48 medium to large cookies out of one batch.
