This Gingered Zucchini and Carrot Noodles recipe is a tasty, easy, healthy side. I sometimes add a scrambled egg or diced chicken and serve it as a main dish.
What you need:
- 1 Tbsp Ginger Jam
- 1 Tbsp soy sauce
- 1 Tsp minced garlic
- 1 Tbsp rice wine vinegar
- 1 Tsp Sriracha
- 1 Tsp sesame oil
- 1 zucchini and/or yellow squash
- 2 large carrots
- Olive oil
What you do for the Gingered Zucchini and Carrot Noodles:
Shred zucchini and carrots into noodles. You can do this with a mandolin, a peeler, or this awesome tool I got at Amazon.com called the “Veggetti. ” Heat olive oil in a large pan over medium-high heat. Add the garlic and ginger jam. Cook for about one minute, then add the zucchini and carrot “noodles.” Cook the noodles for about 3 minutes, then add the remaining ingredients. Cook another two minutes. Serve hot or chill and serve as a salad. So yummy either way!
