This red pepper hummus recipe is my go-to, take anywhere, or just a quick, easy dip/spread. It’s great when I’m craving something a bit different with my pita chips or veggies. This recipe is so versatile, and you can add olives, pine nuts, artichokes, and whatever your heart desires. Below is my recipe for Red Pepper Hummus. I always double the batch because one is never enough at functions since it’s so yummy and goes so fast.
Red Pepper Hummus:
- 1 can chickpeas
- 1/4 cup tahini
- 1/4 cup lemon juice
- 3 TBSP olive oil
- Roasted red peppers from a jar…amount is to your preference (I always splash in some of the juice from the jar)
- 1 TBSP fresh basil (more if you like)
- 1 TBSP garlic (more if you like)
- salt and pepper to taste
Combine all of the ingredients into a food processor and blend until the desired consistency is achieved. It will not be perfectly smooth.
Taste!!!! Add salt and pepper or more basil and peppers if need be.
Serve with veggies, pita chips, or spread on a sandwich.
If you want to try a different hummus flavor, replace the red peppers with whatever you want to add to it, olives or artichokes, or whatever you are feeling like that day.
