Here’s a simple recipe for a baked egg, sausage, & tomato that you can make for lunch, weeknight dinner, or even brunch if you want. It’s easy to make and doesn’t take too many out-of-the-ordinary ingredients. It was a little hard to figure out when the whites of the eggs were solid enough, but the more you make it you’ll be able to get the timing to where you like the consistency of your eggs.
Here’s are the ingredients for the baked egg, sausage & tomato recipe:
- Large fresh tomatoes straight from the garden or farmers market (okay, or from the grocery is fine too)
- 1/2 pound of pork sausage, browned and drained
- Fresh chopped basil
- Medium to large eggs, enough for one per tomato. If you have small tomatoes, then I would use a small egg as well.
- Italian seasoning
- Salt and pepper to taste
- Good quality olive oil
- Fresh mozzarella (optional)
- Toasted Italian bread
Here’s how to put it all together:
- Preheat the oven to 450 degrees F.
- Slice a small piece from the bottom of the tomato so that it will sit flat in a baking dish
- Slice the top off of the tomato and use a spoon to remove the seeds and some of the tomatoes inside. I left enough of the wall of the tomato as you don’t want it too thin when baking
- Drizzle some olive oil in the bottom of the baking dish and then place the tomatoes in the dish so that they are touching each other
- Fill a third to half of the tomato with the browned sausage
- Add chopped basil (the amount depends on how much you like basil). I use about a tablespoon per tomato
- Crack an egg and put it on top; the egg should be just below the rim of the tomato
- Sprinkle top of the egg with salt, pepper, and Italian seasoning
- Pop in the oven and bake about 15 to 25 minutes or until your egg is done to your taste. Mine had solid whites, but the yolk was still runny
- I didn’t do this, but you could top the egg with fresh mozzarella about 5 minutes from being done. I will probably try this next time, and then I can let you know how it goes and the correct amount of time. You want the cheese to melt and brown a little. I would watch it closely
- Serve with toasted Italian bread and enjoy!
